This work is based on the plant design for the production of concentrated orange juice (65°Brix) and powdered orange juice A comprehensive analysis of the raw material, including composition,diversity, period of harvesting and nutritional properties was performed, keeping in mind the objective of obtain a high quality product. An exhaustive market research involving both raw materials and by- products was carried on, with special regards on citric juices. This allows us to know the present situation of the national and international juices market. To improve the insertion possibilities of these products. The technological aspects of the process were analyzed including the flow sheet, mass and energy balances and plant lay—out. The environmental impact that the production pfant may cause was anatyzed, in correction with the measures to be taken to work within the limits of national regulations. Finally. investment calculations, production costs determinations. together with selling prices for products, provide an income-yield capacity for the current work.
