Procesos turístico-patrimoniales en la Fiesta Provincial del Dulce de Leche en Cañuelas, Argentina

Analizamos el proceso de conformación de la fiesta del Dulce de Leche en el municipio de Cañuelas, provincia de Buenos Aires, Argentina, país donde este alimento es considerado parte de la gastronomía nacional. En este marco, revisamos las estrategias implementadas por determinados actores para lograr que dicho evento adquiriera estatus provincial. Identificamos y examinamos documentos y reconocimientos turístico-patrimoniales que se fueron entretejiendo alrededor de ciertos hechos históricos para construir los fundamentos de la creación de dicha fiesta. Este estudio nos permitió analizar las particularidades del proceso, a los actores involucrados, las resignificaciones y transformaciones que ha tenido la fiesta, algunas tensiones expresadas y las estrategias seguidas para justificar la ampliación de su escala de activación de local a provincial. Concluimos que esto último fue posible gracias a la actuación de diversos actores que utilizaron su red de contactos y experticia para construir discursos que legitimaran la relevancia de la fiesta como patrimonio cultural y como producto turístico. Tales procesos de valorización promueven una mayor visibilización del municipio, mejorando su economía a partir del turismo, nuevas inversiones y apoyo logístico desde el sector privado y el gobierno provincial.
In this article we analyze the process of how the local Sweet Milk Fest was created in the municipality of Cañuelas, province of Buenos Aires (Argentina), in a country where this food is considered part of its national gastronomy. In particular, we examine the strategies implemented by certain actors who manage to establish that event as a provincial one. Hence, we identified and examined documents and tourist-heritage recognitions that were interwoven around historic facts to build the foundations of the creation of the Fest. The investigation allowed us to examine the particularities of this process, the actors involved, the resignification and transformations that the celebration has had; tensions emerged and strategies implemented to justify the extend of its scale of activation (local to provincial). We conclude th at the latter process was possible due to the action of certain actors who used their network of contacts and expertise to build discourses justifying the relevance of the Fest as a cultural heritage and tourism product. These heritage and tourism valorizations help to promote greater visibility of the locality in order to improve its local economy through tourism, new investments and logistics support from the private sector as well as the provincial government.
